Clay-gravel soils permitting the plantation of various grape varieties. Gravelly soil between the Garonne River and the Landes forest.
The fruit is hand-picked separately by plot and by varietal. Skin-contact maceration in pneumatic tanks for about 18 hours, which produces about 80% of gravity-fed free-run juice. The remaining 20% are obtained by pneumatic pressing.
Fermentation: 2 weeks in barrels.
Ageing: 50% of the wine is aged 9 months in French oak barrels, 30% of which are made of new oak.
