Chateau Moulin de Canhaut is the only property of the family Potevin. With a small vineyard of only 6 hectares, the family can carefully wait for each small parcel to mature before harvest. The must is cold-macerated before fermentation in temperature-controlled vats. After fermentation, the wine is aged for 14 months in oak barrels, of which 30% is new oak.
