Generous wine from the DO Jerez-Xérés-Sherry, which combines the soft delicate and sharp characteristics of Amontillado and the vinousness and fatness of the Oloroso. The Wellington VORS is made from grape must of the fine Palomino variety, carefully cultivated in white albariza soils, very precious to obtain very fine musts of great quality. The grapes come from our own vineyards located in the payments of Balbiana and Miraflores, considered the best of the Jerez framework. This great wine was sold equally, but with a different name, to the French and the British, with the name of its General, Wellington, during the years 1808 and 1814.
The harvest is done at the beginning of September, when the grape reaches its perfect maturity, and it is the yolk must, obtained without exerting pressure on the grapes, the one destined for the elaboration of the Palo Cortado Viejo Hidalgo. Alcoholic fermentation is carried out by controlling the temperature at all times and taking advantage of the natural yeasts of the vineyard. Once the fermentation is finished, the musts are fortified with wine alcohol up to 17º.
