This is rarely found in a frizzante style, but here Alessia's work shines and speaks for itself. Harvested from 25+ year old vines planted to white, chalky soils at 200+ meter altitudes just south of Lake Garda, this is fermented once in amphora and cement tanks, then refermented with its own must. It's light, fresh, and eminently crushable.
The Sparkling Pinot Grigio "Tribolà" signed Monte dei Roari is born on calcareous soils, rich in skeleton, which give it a peculiar fresh and savory vein; aged in steel before refermentation in the bottle, it is a slender, agile and very pleasant to drink wine, which is well suited to accompany delicate dishes.
